Apple Crumble Cupcakes

Okay, here's my Second recipe, these are really great as a treat and a good comfort food. Delicious. Nom Nom Nom :D Enjoy!

Ingredients (Makes 12 Cupcakes);
  • Juice of 1 lemon 
  • 320g Eating Apples (About 2)
  • 200g Self Raising Flour
  • 1tsp Baking Powder
  • 1tsp Ground Cinnamon
  • 125g Light Soft Brown Sugar
  • 2 Medium Eggs
  • 100g Unsalted Butter, melted
For the Crumble Topping
  • 50g Plain Flour
  • 25g Chilled Unsalted Butter, cut into cubes
  • 15g Light Soft Brown Sugar

Here are the ingredients, don't worry, I changed the Pears for Apples, as they taste better that way. However, you could try the recipe with pears, but the Cupcakes go off quicker

To Make The Crumble;

First preheat the oven to Gas Mark 4 / 180'C and line a 12 space muffin tray with cupcake cases. Put the flour and cubed butter into a bowl and gently rub between your fingertips until you get a coarse breadcrumbs

It should end up looking like this


Put the brown sugar in the bowl and stir to mix together

To Make the Cupcakes;

Next skin and chop the apples

Grate them coarsely into a large bowl


Add the lemon juice and mix together

Then add the Flour, Baking powder, cinnamon and Sugar, mix until they are just combined

In a Separate jug, gently beat together the melted butter and the eggs

Pour this into the flour mixture 

Stir with a spatula until the mixture is just combined

Divide the mixture equally into the Cupcake cases

Sprinkle some of the crumble equally onto the cake mixture

Bake in the oven for 25 minutes

Leave them to cool in the tin for 5 minutes and then transfer to a wire rack to cool completely
